We wanted to make an extra hot fresh and fruity hot sauce which doesn’t rely on on garlic or sugar for its flavour.

Kumquats are a deliciously zesty citrus, and we thought using the whole fruit would work brilliantly with fresh yellow habaneros and scotch bonnets. We’ve balanced these strong flavours with lime juice and vinegar to make a bright and fiery classic style hot sauce.

Heat tolerance is very individual! We’re rating this one 5/5, at the top of our range. It’s got a long simmering heat that will stay with you for a while.
